INGREDIENTS 900 g / 2 lb non-oily fish pieces, such as heads, tails, trimmings and bones 150 ml /  white wine 1 onion, chopped 1 carrot, sliced 1 celery stick (stalk), sliced 4 black peppercorns 1 bouquet garni 1.75 liters /3 pints / 7 1/2 cups water
METHOD 1. Put the fish pieces, wine, onion,carrot, celery, black peppercorns, bouquet garni and water in a large pan and leave to simmer for 30 minutes, stirring occasionally. 2. Strain and blot the fat from the surface with kitchen paper (towels) before using.
