ITALIAN COOKING AND RECIPES   Authentic And Traditional  Italian Food Recipes
INGREDIENTS 2 tbsp butter 25 g / 1 oz plain (all-purpose) flour 300 ml / 1/2 pint / hot milk pinch of nutmeg pinch of dried thyme 2 tbsp white wine vinegar 3 tbsp double (heavy) cream 60 g / 2 oz / 1/2 cup grated Mozzarella cheese 60 g / 2 oz / Parmesan cheese 1 tsp English mustard 2 tbsp soured cream salt and pepper
METHOD 1. Melt the butter in a pan and stir in I the flour. 2. Cook, stirring, over a low heat until the roux is light in colour and crumbly in texture. 3. Stir in the hot milk and cook, stirring, for 15 minutes until thick and smooth. 4. Add the nutmeg, thyme, white wine vinegar and season to taste. 5. Stir in the cream and mix well. 6. Stir in the cheeses, mustard and  cream and mix until the cheeses have melted and blended into the sauce.
