ITALIAN CHEESE SAUCE

METHOD


  1. Melt the butter in a pan and stir in I the flour.
  2. Cook, stirring, over a low heat until the roux is light in colour and crumbly in texture.
  3. Stir in the hot milk and cook, stirring, for 15 minutes until thick and smooth.
  4. Add the nutmeg, thyme, white wine vinegar and season to taste.
  5. Stir in the cream and mix well.
  6. Stir in the cheeses, mustard and  cream and mix until the cheeses have melted and blended into the sauce.
